Recipes to honor Ireland

In honor of our middle son returning safely to his studies at the University College of Dublin (after his travel adventure in Prague, detailed in "Czech Your Travel Plans" blog post), I am going to share the best Irish Soda Bread recipes ever!!!  The recipes come from the kitchen of a very special Irish Grandma Griffin, who is from the County Mayo. 

We do not have to wait until St. Patrick’s Day to enjoy some Irish fare!  Please see recipe section for two versions of Irish Soda Bread,  one a dark, more traditional bread made with boiled water and ingredients and a second lighter bread, using sour cream and omitting the boiled water.  Both are wonderful with a nice cup or tea or coffee, or even better with an Irish Coffee or Irish Whiskey!
