Farm Fresh Egg Bites


Preheat oven to 375 degrees

Spray extra-large muffin pan with baking spray

Note: You can use any size muffin tin that you prefer. The extra-large muffins will take the entire baking time listed below of 20 minutes, while regular and mini-muffin cups will have a shorter baking time.


4 eggs, brown or farm fresh

½ cup flour

1 tsp baking powder

½ cup grated cheddar cheese

Meat of choice, browned (sausage, bacon, ham, etc.)


  1. Mix all ingredients, except the meat, together and fill muffin tins about 2/3 full.
  2. Top the muffins with the browned meat and very gently push the meat just slight into the very top of the muffin batter.
  3. If you have any empty muffin cups in the muffin tin, be sure to fill them with a small amount of water before putting them into the oven. This will help to even out the baking across the muffin pan.
  4. Bake about 20 minutes or until slightly browned on top and firm. Baking time will be less for regular and mini-muffin pans.
